The Chilgoza pine nut is the edible seed of the Chilgoza pine, which belongs to the Pinaceae family, mainly distributed in the natural regions of only 2 parts of the world Afghanistan and India.
In India, it grows in the Tribal forest of Kinnaur. In Kinnaur, most of the Chilgoza forests are owned and managed by villagers, while a small percentage of Chilgoza forests are owned by individual families.
Few IMPORTANT things for your reference
▪️ These chilgozas are harvested in Oct' 2022 and come to Kinnaur District.
▪️ Chilgoza is wild nuts and CAN NOT be grown commercially and hence 100% ORGANIC
▪️ We have roasted them approx. 80-90%. They are not 100% roasted because we STRONGLY recommend you roast them slightly on Pan for 60-120 sec [ Pine Nuts will start to Pop just like Popcorns ] when you want to eat them. This is the best way to eat chilgoza as recommended by our elders.
▪️ We have heard from some of our clients that, Chilgoza they used to buy was light brown in color and very uniform in texture, and ours are very dark brown. The reason is NOT the quality. They turn light brown because of treatment with HCL chemical. We don't follow these practices. Our chilgozas are 100% organic.
